Vegetables are available from May until Dec. The season starts with a small crop of baby vegetables which are grown as a catch crop in the polytunnels before the tomatoes are planted out. Baby turnips, radish and spring onions are harvested in April and early May, tender and tasty they herald the start of the vegetable season at our farms.
Broad beans are the the first legumes to hit the plate, we pick them small and sweet so they only need to be blanched for a short while to release their nutty flavours. The broad bean tops are also popular as they make a great pesto. Talking pesto, wild garlic also known as ransoms flourish in our organic woodlands during April and May and also makes great pesto.
The main crops are ready from June - spinach, chard, beetroot, carrots, artichokes and courgette's form the mainstay of our summer vegetable harvest but not just your run of the mill types. We grow multi coloured carrots, gold, stripy and red beetroot and the courgette's come in all shapes, sizes and colours, with and without flowers attached.
We harvest when everything when perfectly ready for the table, no woody beets, oversized tasteless courgette's or stringy beans. Our aim is to supply you with produce that needs little doing to it, adds that wow factor to your dishes and is just simply the best. |
